You open a collection. Three cards in a row say Sold out. People leave. You do not want to set those products to Draft – the pages can 404, and Google still has the old links. You just do not want Sold out on the front of the collection, or on the store, until you have stock again.
Shopify’s own hide is a smart collection rule: inventory greater than 0. That takes the product out of that collection. It is still on the store, still on Facebook, and you add the rule on every collection you care about [Source: Shopify Help Center, hiding out of stock products]. Draft and Unlisted are different clicks. Draft can 404. Unlisted adds noindex and drops the page from your sitemap [Source: Shopify Help Center, product status].
If you want sold-out products off the store – and back when you restock – that is auto-hide and auto-republish in StockIQ. Online Store only, or all sales channels. Re-publish is a separate switch, off until you turn it on.
Draft, Unlisted, and a collection filter are not the same hide
In Shopify Admin they all look like hide. They are not. One takes the product off a collection. One can 404. One tells Google to forget the page.

Flow can unpublish a sales channel when stock hits zero. No delay in days. No Online Store vs all channels. No tag to spare a pre-order. Theme code that skips sold-out products only hides cards in that loop. It does not take the product off the store, and it does not hide it from Facebook. Hiding a sold-out size in the variant picker is a different job.
How to hide out-of-stock products in Shopify without deleting them
Install StockIQ. Open Settings → Hide/Show Out-Of-Stock. Turn on Hide Out-Of-Stock Products. Set how many days it must stay sold out (default 7, up to 365). Zero means it qualifies as soon as it is out. Hide still waits for the daily sort – 02:00 in your store timezone – unless you have Real-time Sort (Gold and above, or $2.99). Until that run, it can still show in collections.
The product stays in Admin. Nothing is deleted. Turn on Re-Publish Back To Stock if you want those same products back when you add inventory. That switch starts off. Only what StockIQ hid comes back this way. A draft you made by hand stays a draft. Hid a batch by mistake? Re-Publish All Products Now.
Tag a pre-order or a waitlist product if it should stay published. Apply to Enabled Collections Only if hide should only touch collections you turned on in the dashboard. Leave that off to hide across the store. Hide Empty Collections takes down a collection page when everything in it is sold out, and puts it back when any SKU returns.
Off the store, off every channel, or with a redirect
Hide products from has two options. Online Store Only (the default) takes it off your Shopify store. The product stays Active. All Sales Channels sets Draft – off the store, off Facebook, off the rest.
Both take it off the store. If Google still has the URL, someone can hit a 404. If you need the page to stay up, push sold-out products to the bottom of collections instead. That is the StockIQ rule that protects search rankings by leaving the listing published.
If you are hiding on purpose and you will not restock, turn on Redirect Hidden Products. StockIQ adds a Shopify 301 from the old product URL to your home page, Collections/All, or a link you type. Shopify 301s stay. Re-publish does not delete them. If you will restock, skip the 301 and turn on Re-Publish Back To Stock so the same page comes back.
