Can I create a custom sorting order for product variants in a Shopify collection?

I sell maxi skirts and summer dresses on Shopify. As of right now, all my products are sorted alphabetically which is the default sort option in Shopify. However, I want to organize them by stock availability as I would like items with the most stock to be at the top of their collections. Please can someone tell me if this is possible?
