How many stores can I open on one Shopify account?

Just one. You can only open one Shopify store on one account. However, you can create multiple accounts using the same email to set up another Shopify store, you will manage their inventory differently using their Shopify accounts. You may get a multiple account discount if you are setting up an identical store but in a different language or currency.
